Mediterranean Meatball Bowls

Beef Meatball Ingredients:
1 lb organic grass-fed ground beef
1/2 tbsp olive oil
Seasoning: salt, pepper, garlic granules, za’atar blend
1/4 cup chopped onions
2 tbsp chopped parsley
Cucumber Salad Ingredients:
2 Persian cucumbers, sliced
1/2 tbsp olive oil
Juice of 1/2 lemon
Salt (to taste)
1/2 tsp dried dill
1/4 tsp garlic granules
Instructions:
Prepare the Meatballs:
In a large bowl, mix together the ground beef, olive oil, chopped onions, chopped parsley, and seasonings (salt, pepper, garlic granules, and za'atar). Combine well.Form the Meatballs:
Roll the mixture into small meatballs, about 1-1.5 inches in diameter.Cook the Meatballs:
Heat olive oil in a skillet over medium heat. Add the meatballs in batches, cooking them for 3-4 minutes on each side, or until browned and cooked through. Remove and set aside.Prepare the Cucumber Salad:
In a small bowl, combine the sliced cucumbers, olive oil, lemon juice, salt, dill, and garlic granules. Toss until the cucumbers are evenly coated with the dressing.Serve:
Serve the beef meatballs with the cucumber salad on the side, accompanied by jasmine white rice for a complete meal.
