Breakfast Quesadilla

Ingredients:

  • 4 eggs

  • Salt & pepper (to taste)

  • 1/4 tsp garlic powder

  • Shredded cheese (your choice)

  • 2 large tortillas

  • Avocado oil spray

Instructions:

  1. Prepare the Eggs:
    In a bowl, whisk the eggs with a pinch of salt, pepper, and garlic powder. In a non-stick pan, soft scramble the eggs over medium heat until they are just set, then remove from heat and set aside.

  2. Assemble the Quesadilla:
    In a separate large skillet, spray with avocado oil and place one tortilla in the pan. Sprinkle shredded cheese evenly across the tortilla, then place the second tortilla on top to form a quesadilla. Cook over medium heat, flipping once to brown both sides until the cheese is melted and the tortillas are golden.

  3. Add the Eggs:
    Once the quesadilla is cooked, carefully open it and spread the soft scrambled eggs inside. Close the quesadilla back up, remove from the skillet, and transfer to a plate.

  4. Serve:
    Cut the quesadilla into wedges and serve immediately. Enjoy!
