High Protein Bowl with Sweet Potatoes, Ground Turkey & Broccoli

This quick and satisfying bowl is a go-to for a high-protein, well-balanced meal. With roasted sweet potatoes, lean ground turkey, and simple steamed broccoli, it’s flavorful, nourishing, and perfect for meal prep. A great option when you want to feel full and energized—without spending hours in the kitchen.

Ingredients:

  • 2 medium sweet potatoes, sliced into rounds

  • 1 lb ground turkey (form into 4–6 oz patties)

  • 2–3 cups broccoli florets

  • Olive oil or avocado oil spray

  • Salt, pepper, garlic granules (to taste)

Instructions:

1. Roast the Sweet Potatoes:
Parboil sweet potato rounds in salted water for 5 minutes until slightly tender.
Drain and let cool. Toss with olive oil, salt, and pepper.
Place on a baking sheet and roast at 350°F (175°C) for 25–30 minutes until golden and soft.

2. Cook the Turkey Patties:
Form ground turkey into 4–6 oz patties. Season both sides with salt, pepper, and garlic granules.
Heat a lightly oiled pan over medium heat. Cook patties for 4–5 minutes on each side, or until cooked through and golden brown.

3. Steam the Broccoli:
Steam broccoli in the microwave with a splash of water, or boil in salted water for about 4 minutes until bright green and crisp-tender.

4. Assemble & Serve:
Layer your roasted sweet potatoes, turkey patty, and steamed broccoli in a bowl. Enjoy fresh, or store in containers for meal prep throughout the week.
