Chicken Enchiladas with Red Sauce
Ingredients:
1 package tortillas (taco-sized, burrito-sized, or cut burrito-sized in half)
1 lb shredded chicken breast
1-2 cups shredded Mexican cheese blend (to taste)
1 can red enchilada sauce
1/2 cup green enchilada sauce
Instructions:
Prepare the Chicken Filling:
In a large bowl, mix the shredded chicken breast with 1/2 cup shredded Mexican cheese, 1/4 cup red enchilada sauce, and 1/4 cup green enchilada sauce. Stir until the chicken is evenly coated with the sauce and cheese mixture.Assemble the Enchiladas:
Spoon the chicken mixture into each tortilla, then roll them up into a mini burrito shape. Place the rolled enchiladas seam-side down in a baking pan.Add Sauce and Cheese:
Pour the remaining red enchilada sauce over the enchiladas, ensuring they are evenly coated. Top with more shredded Mexican cheese.Bake:
Preheat the oven to 350°F (175°C). Bake the enchiladas for 20 minutes, or until the cheese is melted and bubbly.Serve:
