Chicken Brocoli Alfredo Pasta

Ingredients:

  • 1 pack gemelli noodles (or pasta of your choice)

  • 1 pack broccoli florets

  • 1 jar Alfredo sauce

  • Grated Parmesan cheese (to taste)

  • Zest of 1/2 lemon

  • 1/2 tsp garlic granules

  • Salt & pepper (to taste)

  • Red chili flakes (to taste)

  • 2-3 organic boneless, skinless chicken breasts

  • 2 tbsp olive oil

Instructions:

  1. Marinate the Chicken:
    In a bowl, marinate the chicken breasts with olive oil, garlic granules, salt, pepper, red chili flakes, and a sprinkle of grated Parmesan cheese. Let the chicken marinate for at least 30 minutes.

  2. Cook the Chicken:
    Grill or air fry the chicken breasts until fully cooked (internal temperature should reach 165°F), then set aside. Once slightly cooled, slice the chicken into thin strips.

  3. Cook the Pasta:
    Bring a large pot of salted water to a boil. Add the gemelli pasta and cook according to the package instructions until al dente. Drain and set aside.

  4. Blanch the Broccoli:
    In a separate pot, boil salted water and blanch the broccoli florets for 3 minutes. Drain and set aside.

  5. Prepare the Alfredo Sauce:
    In a medium saucepan, heat the Alfredo sauce over medium heat until it begins to bubble. Stir in the lemon zest to brighten the flavors. Reduce the heat to low.

  6. Combine Pasta and Broccoli:
    Add the cooked pasta and broccoli to the Alfredo sauce. Stir well to ensure the noodles and broccoli are evenly coated with the sauce.

  7. Serve:
    Plate the pasta mixture and top with the sliced chicken breast. Garnish with extra grated Parmesan cheese and red chili flakes for a bit of heat. Serve hot and enjoy!
