Chicken Parmesan & Zucchini Bake (Gluten-Free Comfort Food)
A cozy, gluten-free dish that’s perfect for clearing out the fridge. Think of it as a lasagna-inspired bake—but with zucchini instead of pasta. This recipe is comforting, versatile, and perfect for weeknights or the holiday season.
Ingredients:
For the Zucchini Bake:
5–6 zucchinis, stems removed, thinly sliced
Tomato sauce (store-bought or homemade)
Grated Parmesan cheese
Gluten-free Panko breadcrumbs
Olive oil
For the Chicken Parmesan:
Thinly sliced organic skinless chicken breasts
Salt & pepper (to taste)
Garlic granules
Italian seasoning
Grated Parmesan cheese
Red chili flakes (optional)
Olive oil
Instructions:
1. Prepare the Zucchini Bake:
Preheat oven to 350°F (175°C).
In a baking dish, spread a thin layer of tomato sauce on the bottom.
Layer zucchini slices like lasagna sheets, covering each layer with sauce and a sprinkle of Parmesan cheese.
Repeat until filled, finishing the top layer with just Parmesan.
Cover with foil and bake for 30 minutes.
Remove foil, top with more Parmesan and Panko, and bake for another 20 minutes until golden and crisp.
2. Cook the Chicken Parmesan:
Season chicken with salt, pepper, garlic granules, Italian seasoning, Parmesan, and red chili flakes.
Heat olive oil in a pan over medium heat and cook chicken for ~6 minutes per side or until internal temp reaches 165°F (75°C).
3. Assemble & Enjoy:
Serve the crispy, cheesy zucchini bake alongside the flavorful chicken for a satisfying, gluten-free meal.
