Chicken Parmesan & Zucchini Bake (Gluten-Free Comfort Food)

A cozy, gluten-free dish that’s perfect for clearing out the fridge. Think of it as a lasagna-inspired bake—but with zucchini instead of pasta. This recipe is comforting, versatile, and perfect for weeknights or the holiday season.

Ingredients:

For the Zucchini Bake:

  • 5–6 zucchinis, stems removed, thinly sliced

  • Tomato sauce (store-bought or homemade)

  • Grated Parmesan cheese

  • Gluten-free Panko breadcrumbs

  • Olive oil

For the Chicken Parmesan:

  • Thinly sliced organic skinless chicken breasts

  • Salt & pepper (to taste)

  • Garlic granules

  • Italian seasoning

  • Grated Parmesan cheese

  • Red chili flakes (optional)

  • Olive oil

Instructions:

1. Prepare the Zucchini Bake:

  • Preheat oven to 350°F (175°C).

  • In a baking dish, spread a thin layer of tomato sauce on the bottom.

  • Layer zucchini slices like lasagna sheets, covering each layer with sauce and a sprinkle of Parmesan cheese.

  • Repeat until filled, finishing the top layer with just Parmesan.

  • Cover with foil and bake for 30 minutes.

  • Remove foil, top with more Parmesan and Panko, and bake for another 20 minutes until golden and crisp.

2. Cook the Chicken Parmesan:

  • Season chicken with salt, pepper, garlic granules, Italian seasoning, Parmesan, and red chili flakes.

  • Heat olive oil in a pan over medium heat and cook chicken for ~6 minutes per side or until internal temp reaches 165°F (75°C).

3. Assemble & Enjoy:

  • Serve the crispy, cheesy zucchini bake alongside the flavorful chicken for a satisfying, gluten-free meal.
