Chicken Salad Wrap (Easy, Flavorful & Perfect for Lunch)
This chicken salad is one of my favorite go-to meals—especially when I have leftover rotisserie chicken in the fridge. It’s crunchy, creamy, a little tangy from the pepperoncinis, and totally satisfying. Whether served in a wrap, on toast, or with salt and vinegar chips (my personal fave!), this is a lunch you'll actually look forward to.
Ingredients:
2–3 cups shredded rotisserie chicken
2–3 tbsp mayonnaise (adjust to desired creaminess)
1 shallot, finely chopped
1 celery stalk, finely chopped
2–3 pepperoncini peppers, finely chopped
Salt & pepper (to taste)
Optional for serving:
Tortillas (for wraps)
Lettuce leaves
Sliced cheese
Toast or sandwich bread
Salt & vinegar chips (highly recommended!)
Instructions:
Make the Chicken Salad:
In a bowl, combine shredded rotisserie chicken with mayonnaise, chopped shallots, celery, and pepperoncinis. Season with salt and pepper to taste. Mix until well combined.Serve Your Way:
