Chicken Salad Wrap (Easy, Flavorful & Perfect for Lunch)

This chicken salad is one of my favorite go-to meals—especially when I have leftover rotisserie chicken in the fridge. It’s crunchy, creamy, a little tangy from the pepperoncinis, and totally satisfying. Whether served in a wrap, on toast, or with salt and vinegar chips (my personal fave!), this is a lunch you'll actually look forward to.

Ingredients:

  • 2–3 cups shredded rotisserie chicken

  • 2–3 tbsp mayonnaise (adjust to desired creaminess)

  • 1 shallot, finely chopped

  • 1 celery stalk, finely chopped

  • 2–3 pepperoncini peppers, finely chopped

  • Salt & pepper (to taste)

Optional for serving:

  • Tortillas (for wraps)

  • Lettuce leaves

  • Sliced cheese

  • Toast or sandwich bread

  • Salt & vinegar chips (highly recommended!)

Instructions:

  1. Make the Chicken Salad:
    In a bowl, combine shredded rotisserie chicken with mayonnaise, chopped shallots, celery, and pepperoncinis. Season with salt and pepper to taste. Mix until well combined.

  2. Serve Your Way:
    This salad is delicious in so many forms—
    • Spoon into a tortilla with lettuce and cheese for a wrap
    • Spread on toast or sandwich bread
    • Or enjoy alongside your favorite chips (salt & vinegar is a classic pairing!)
