Ginger Chicken Bok Choy Noodle Soup
A nourishing and immune-boosting take on chicken noodle soup with a fresh twist.
Ingredients:
8 cups chicken bone broth
1.5 lbs boneless, skinless chicken thighs (cubed)
¼ white onion, sliced
1 green onion, chopped
1 Serrano pepper, chopped
3-inch piece of ginger, peeled and chopped
5 cloves garlic, sliced
2 tbsp sesame oil
8 bok choy, chopped
½ cup pastina noodles
Zest of 1 lime
Juice of 2 limes
Garlic powder, salt, fish sauce, turmeric (to taste)
Instructions:
In a large pot, heat sesame oil over medium heat.
Add onions, green onion, garlic, and ginger. Sauté for 2 minutes until fragrant.
Add cubed chicken thighs and cook for 2-3 minutes until lightly browned.
Stir in lime zest, garlic powder, and salt. Add the chopped bok choy.
Pour in 8 cups of chicken bone broth and bring to a boil.
Add pastina noodles, 1-2 tbsp of fish sauce, and lime juice.
Reduce heat, cover, and let simmer for 30 minutes.
