Ginger Chicken Bok Choy Noodle Soup

A nourishing and immune-boosting take on chicken noodle soup with a fresh twist.

Ingredients:

  • 8 cups chicken bone broth

  • 1.5 lbs boneless, skinless chicken thighs (cubed)

  • ¼ white onion, sliced

  • 1 green onion, chopped

  • 1 Serrano pepper, chopped

  • 3-inch piece of ginger, peeled and chopped

  • 5 cloves garlic, sliced

  • 2 tbsp sesame oil

  • 8 bok choy, chopped

  • ½ cup pastina noodles

  • Zest of 1 lime

  • Juice of 2 limes

  • Garlic powder, salt, fish sauce, turmeric (to taste)

Instructions:

  1. In a large pot, heat sesame oil over medium heat.

  2. Add onions, green onion, garlic, and ginger. Sauté for 2 minutes until fragrant.

  3. Add cubed chicken thighs and cook for 2-3 minutes until lightly browned.

  4. Stir in lime zest, garlic powder, and salt. Add the chopped bok choy.

  5. Pour in 8 cups of chicken bone broth and bring to a boil.

  6. Add pastina noodles, 1-2 tbsp of fish sauce, and lime juice.

  7. Reduce heat, cover, and let simmer for 30 minutes.
